As much as we plan out our road trips, inevitably on the last day we find ourselves in a rush to get home before dark. As a rule we don’t drive after dusk because of the wildlife, and also remote areas don’t always have cell service. So on this last trip heading home from Salt Lake City via Moab, we were in a hurry to grab lunch and continue on to Durango. (A shame, too … rushing through gorgeous Moab!)
Moab is one of our very favorite destinations where we will never run out of discoveries … hikes through the deep colored, fire red rocks, following the petroglyph trail, and all of the arches dotted around the landscape. We have our go-to’s for dining but this time we needed a quick bite to eat (that was not a fast food franchise – no no never never if we can help it) and we were in the mood to try something new.
Tah-daah! Hello, Moab’s gourmet food truck Quesadilla Mobilla!
They’re parked right on the main drag as you drive through town at Main and West 100 North. It’s a nice spot with shade trees, overhead canopies, an outdoor courtyard with tables, chairs, and water mist sprayers because it’s a tad toasty in Moab this time of year.
Quesadilla Mobilla has been getting great revues. Their menu offers something for everyone … slow cooked meats, green chile, red chile, sautéed onions, mushrooms, jalapeños to name only a few … and plenty of cheeses for the perfectly melted combination between two crispy grilled flour tortillas. Vegan options are also available. Service was speedy and we heard that even though lines can get long during the lunch rush, it moves along quickly. We tried the Fiery Fungus, a red chile shredded beef topped with sautéed mushrooms, sautéed onions and plenty of jalapeno heat, all melted together with cheddar/jack cheese. Just the right proportions of fillings, a little heat, cilantro lime sour cream to cool things down, and the green chile salsa was fresh and perfect for dipping.
If you are traveling through Moab or staying in town, you must make a stop at Quesadilla Mobilla! Great service, great food, great location, and we were home well before dark.
